
STRAWBERRY COVERED STRAWBERRIES

INGREDIENTS
200 g Strawberry Inspiration
12 ea fresh market strawberries (stem on)
12 ea fresh market strawberries (stem on)
AN freeze dried strawberries
AN toasted sesame seeds
AN olive oil powder
AN coconut
AN violets
AN bourbon sugar
AN freeze dried pineapples
INSTRUCTIONS
- Temper the Strawberry Inspiration by carefully melting it, then following the tempering process with the curve below. Heat the Strawberry Inspiration to 95-104˚F, then cool it to 81-82˚F before heating it back up to 86-88˚F.

- Dip the strawberries into the couverture then sprinkle with the remaining ingredients as desired.
- Lay on parchment paper to set.
