Praline is a mixture of hazelnuts or almonds, sugar and crushed chocolate, more or less finely ground. This fruity praline contains 50% dried fruits: 25% rigorously selected Italian hazelnuts and 25% Spanish almonds.

This praline offers a perfect balance between Spanish almonds and Italian hazelnuts for a result with typical roasted notes of dried fruits. This praline has a slightly sweet perception with typical roasted notes of dried fruits. It's a delicious creation made with quality ingredients.
Valrhona prioritizes excellence in flavor along with absolute consistency in the quality of the nuts. Slightly sweet and sugary caramel notes preserve the flavor of Valencia Almonds and Roman Hazelnuts. In the beginning, raw nuts and sugar cook together. This process, the ‘Chouchou’ cooking method, enhances the flavors of the nuts.
The roasted nuts are then added to caramel. This process has been Valrhona’s signature and produces an intense caramelized PRALINÉ flavor.
The praline is made through a process called "sablage": cooking the dried fruits and sugar together in a cauldron from the beginning of cooking. This way, the praline obtains a very fruity taste close to the taste of the original fruit.

With its smooth and homogeneous texture, this finely ground praline will be perfect for all traditional pastry applications (ganache, creams.) or simply on toast and pancakes. It will be ideal for flavoring a ganache, a whipped cream, making a butter cream for a delicious Paris-Brest, the uses are multiple. You can also use it as a simple spread on your pancakes, waffles or toast. We draw your attention to the fact that decantation (the hazelnut oil that rises to the top of the product) is a natural phenomenon of praline. This does not alter the product at all.
