Location: Class will be held on Zoom, the link to join will be emailed to you within 24 business hours (weekdays, 9am-5pm EST) of class purchase. You will also receive a reminder email with the link to join the Friday before class, the day before class and 30 minutes before class starts. The link to join the class cannot be shared.

Recorded Session: To purchase, in lieu of the live session, students can purchase the class recording. $35 for the recorded session. Students will also receive a discount code for 20% off your next purchase on our online boutique.


Class includes: Live Session: Class recipe book and a 20% discount code for our online boutique will be sent the Friday before class starts. All live sessions feature the opportunity to ask questions via chat box throughout the class and additional time is set aside at the end of class for a Q&A session. The class recording will be sent the day after class.

Class Description:

Join Chef Patrice Demers, one of the most popular and renowned pastry chefs in Canada, for his online class. You will learn the importance of balancing and combining flavors and textures to create seasonal pastries. Discover how to use wild and innovative ingredients such as mushrooms, sweet clover and flowers to create desserts that your customers will remember.

Chef Bio: 

Passionate about restaurants and pastry for many years, Patrice decided in 1999 to enroll in cooking school. After his training in pastry and in professionnal cooking, he worked for more than 15 years in some of Montreal’s best restaurants, creating desserts where fruits and acidity play an important part and where sugar never dominates.
In 2014, he opened his own pastry shop: Patrice Pâtissier in Montreal where he created desserts using local and seasonal ingredients. Because he loves to share his passion for pastry, he was hosting a t.v. show "Les Desserts de Patrice" for 5 seasons on Canal Vie and he published in 2019 his fourth book "Parcours Sucré". Some of his recipes have been published in magazines like "So Good" and "Fou de Pâtisserie". He's also been invited three times to Paris to gives demonstrations at the Omnivore Food Festival. Patrice had the honour to be named Best Pastry Chef in Québec in 2018 by the Lauriers Gala. In 2019, Ladurée choose him to collaborate on their new Christmas Collection.
After closing his pastry shop in August 2022, he is now doing consulting, pop-ups and teaching at culinary schools.
